I’m sure most of you are familiar with an insalata caprese or a caprese salad, but hopefully a few of you are also familiar with the sandwich version. We love sandwiches at our house and the caprese is absolutely no exception. As you know, my poor basil plan nearly died last week in our awful heat, but Brad’s quick thinking to bring him in the house really helped while I tried to nurse him back to life – and voila! He provided one of the three main ingredients for this sandwich.
Tomatoes – add salt
Slap those three ingredients between two buttered pieces of bread (I used sourdough) and cook in a heated pan- each side for a few minutes or until golden brown.
One of the best sandwiches in the world. The combination between tomatoes, mozarella and basil is absolutely mind blowing. And of all the pairings in the world, this one really just takes the cake. It’ a better match than peanut butter and jelly or fighting and reality tv… and don’t get me wrong, I like both of those things.
