Tilapia and Cucumber Salad

So… time to take a small break from baking and focus on healthier eating. Don’t get me wrong, I will still be baking, just not as much. Our option for a healthy, but tasty dinner was:

Tilapia

Season with garlic powder, sea salt, pepper and crushed red peppers

Saute in a skillet with olive oil for 4-5 minutes on each side, depending on the thickness

Brad’s Cucumber Salad

2 cucumbers, chopped

grape tomatoes, chopped

1/3 onion, thinly sliced

2 avocados, chopped

Toss with rice vinegar, salt & pepper
