My co-worker David generously lent his bike to Brad’s dad for the weekend. In return, I had to make him something yummy. Although he mentioned he’d take a pumpkin cheesecake, I didn’t feel it was appropriate being out of season. So I settled for cookies instead. Chocolate Thumbprint Cookies, as he is definitely a chocoholic.
1/2 C sweet butter (at room temp)
1/2 C brown sugar
2/3 C flour
1/4 C cocoa powder
1/2 t baking soda
1 C oats (I used Honey and Oats Granola with almonds)
Spread – I used nutella
Cream together butter and sugar. Add remaining ingredients, mix well. Roll the mixture into balls, lightly press down with your thumb. Bake at 350 for 10 minutes. Cook for 2 minutes, add the spread.
Easy peasy. And good.
